• 3 cups diced watermelon
  • 1 jalapeño pepper, seeded and minced—or more, to taste
  • 1/2 cup red onion, diced
  • 1/4 cup chopped cilantro
  • Juice of 1 lime
  • Salt & pepper, to taste

Mix watermelon with jalapeño pepper, onion, and cilantro. Squeeze in lime juice. Check for seasoning and add salt & pepper, if desired.
