Quesadillas may be one of the easiest Mexican Foods to make! Even the kids can help!

The basic is a tortilla and cheese. 

  • flour tortillas,
  • add a thin layer – about 2 tsp – of Salsa Verde,
  • a handful of shredded Tillamook cheddar cheese,
  • a few chopped green onions,
  • and a few chopped tomatoes.

Place the tortilla on a griddle or fry pan. No oil is necessary. Place the ingredients on the tortilla, place another tortilla on top and smoosh down a bit. Flip the tortilla and heat the top side. eat and enjoy!

You can use ANY filling, from refried beans to cooked chicken, shrimp, whatever.
