Cucumber Feta Salad
- 1 cucumber, peeled and diced
- 1/2 block Greek Feta, cubed
- 2 tbsp White Balsamic Vinegar
- 1/4 tsp Red Pepper Flakes – or more, to taste
- Black pepper, to taste
Mix cucumber and cheese in medium bowl. Add crushed red pepper and balsamic and gently toss. Add freshly-ground black pepper, if desired.
**VARIATIONS:
Increase feta to one full block and add:
- a chopped tomato
- chopped bell pepper ot other fresh vegetable of your choice
- any fresh herbs you may have on hand
