Curried Pumpkin Soup
A great fall (or anytime) soup – and it’s ready in minutes!
- 1 jar Pumpkin Butter
- 1 can Coconut Milk
- 1/2 tsp Curry Powder (more or less, to taste)
- 1 bag Frozen Brown Rice
- Salt and Pepper to taste
Combine all ingredients and heat. It’s that easy! And then add:
- Such and Such Nut Mix for garnish
This soup is a great on its own, and makes a great base for an even heartier meal!
Add tofu, meat, or poultry, such as canned turkey or chicken. Or add any leftover’s you might have.
Add any assortment of vegetables – from cubed squash to broccoli, peas, diced carrots (our Rainbow Carrots would be a fun and attractive addition!)
