A mandoline really comes in handy, here. If you don’t have one, cut the apples and fennel into matchstick-sized pieces…

dressing:

  • 2 tbsp lemon juice
  • 2 tbsp honey
  • 2 tbsp white wine or apple cider vinegar
  • 2 tbsp olive oil
  • pinch each – salt, pepper, thyme

salad

  • 1 large apple – your choice
  • 1 large bulb fennel
  • 1/2 cup thinly-sliced red onion

Make dressing first – it will keep apple from browning. Whisk together ingredients in bowl. Set aside.

Using mandoline or your knife skills, cut apple, fennel, and onion into matchstick-sized pieces.

Miz with dressing, and taste for seasoning, adding additional S&P or herbs, as desired.
