Ingredients:

  • 1¾ cups flour
  • 1 tablespoon baking powder
  • 2 egg yolks
  • 1¾ cups milk
  • ½ cup oil
  • 2 egg whites
  • ½ teaspoon salt

Directions:

  1. Stir together flour, baking powder, and salt.
  2. Beat together egg yolks, milk, and oil.
  3. Add all at once to flour and stir till blended but still slightly lumpy.
  4. Beat egg whites till stiff peaks form.
  5. Gently fold egg whites into flour mixture.

Before you fold in egg whites you can add:

  • ½ cup fresh fruit or berries
  • ¼ cup chopped nuts or coconut
  • ¼ cup chocolate (semi-sweet – grated)
