Candy, candy, candy. I feel like Garfield at Halloween! These are fun and easy to make!
- 2 cups pecan halves
- 1 1/3 cups whipping cream
- 1 cup sugar
- 1/2 cup light corn syrup
- 1/3 cup milk
- 1/2 cube butter
- 1 tsp vanilla
- 12 oz semi-sweet chocolate, melted
Prepare 2 cookie sheets with buttered parchment paper. Arrange pecan halves in clusters to resemble ‘turtles.’ Combine heavy cream, sugar, corn syrup, milk, and butter. Stir over low heat until sugar dissolves. Increase heat to high, and boil until mixture turns golden and reaches 234° on a candy thermometer – about 15 minutes.
Stir in vanilla. Drop 1 tbsp caramel onto each pecan cluster. Cool. Drizzle 1 tbsp melted chocolate over each candy. Chill until set.
