These past three weeks have been rough, boys and girls… Not for me – I’ve been livin’ the high life. No, they have been rough for Victor – chief cook, bottle washer, trash taker-outer, bed-maker, laundry-doer… you get the picture. It’s not easy doing EVERYTHING EVERYDAY! Yet, he did – and still managed to laugh a lot.
His meals have been exceptional. Naturally, I didn’t take many pictures. I’m blaming the pain medications – but I did take some…
Like Stuffed Peppers…
Peppers stuffed with Hot Italian Sausage, pasta sauce and cheese…
Or a petit filet with mushrooms, parslied potatoes, and peas…
Good protein for bone health, and all that…
And Pasta with a pork chop simmered in sauce…
And last night’s Roasted Chicken with homemade dressing, mashed potatoes, and homemade Cranberry Sauce.
Yes, I have been ridiculously spoiled.
Tonight is my payback dinner… I’m going to take last night’s leftovers and create a chicken pot pie with the dressing as a bottom crust and puff pastry for the top.
I had my three week follow-up on Thursday. Doctor was extremely pleased with my progress – I have an excellent gait and pain is managed with Tylenol. I can tell I’m getting old… They gave me actual legal narcotics and I didn’t even take them all… Yes, times have changed…
And speaking of… I’m floating an idea about a weekly cooking the world A-Z starting in January. I haven’t worked out all the details, but as soon as I do, I’ll let ya know!
