We were doing a bit of grocery shopping the other day and Victor said he was hankerin’ for some chicken wings as we were walking through the meat department. And if by magic, a display of fresh wings was before us. It’s simply amazing what one can conjure up at the local WinCo!
Into the cart, into the ‘fridge, and onto the grill they went!
Victor did the grilling – a simple low-and-slow. He placed the wings in a bowl, added a bit of oil, salt, pepper, and garlic powder. Mixed well, and then onto a very low – about 300°F – grill for about 45 minutes. He then raised the heat and basted them with some Spicy Mango BBQ Sauce – turning and basting and turning and basting until properly charred.
They were delicious!
Spicy Mango Rum BBQ Sauce
- 1 (24 oz) package frozen mango, thawed
- 1 cup chopped onion
- 1/2 cup cider vinegar
- 1/2 cup brown sugar
- 1/4 cup honey
- 2 tablespoons Dijon mustard
- 1 jalapeno pepper, chopped
- 1 habanero pepper, chopped
- 1 teaspoon dry mustard
- 1 teaspoon chili powder
- 1 teaspoon salt
- 1/3 cup rum (Myers’s is my Go-To)
In a large saucepan, combine the mango, onion, cider vinegar, brown sugar, honey, mustard, jalapeno pepper, dry mustard, chili powder, and salt and bring to a boil then reduce the heat and simmer, uncovered, for 20 to 25 minutes or until the mango very tender and the mixture is thickened.
Stir in the rum and let cool slightly.
Transfer the mixture to a blender and blend until smooth.

Mom’s Potato Salad
- potatoes (russets, yukon gold, red bliss)
- pickles
- hard-cooked eggs
- celery
- shredded carrots
- mayonnaise
- catsup
- mustard
- garlic powder
- salt
- pepper
Mix and chill.
Amounts vary by the number you’re feeding – and what you have around the house. I think my mom usually used russets and probably used some Lawry’s seasoned salt in hers, but it’s not something I generally have in the house….. A good squirt of ketchup and a small squirt of mustard – yellow, of course – mostly mayo-based. It’s kinda hard to screw it up.
And, yes… the two of us ate that whole plate of wings…
