I love it when Victor says he’ll cook! No matter what he makes, it’s always good!
When we were shopping the other day, he espied some really nice bell peppers – and two that were the exact size. Definitely time for Stuffed Peppers.
In our house, there’s no real recipe for things like stuffed peppers – you just make them. And that’s exactly what he did.
- ground beef
- garlic
- shallot
- chopped pepper tops
- breadcrumbs
- egg
- salt
- pepper
- oregano
- parmigiano reggiano
- pasta sauce
Simply mix everything together, stuff the peppers, add a bit of sauce to the pan, place peppers in pan, top with a bit of sauce and a bit of cheese, cover, and bake in a 350°F oven for about 45 minutes.
It really is that easy – and delish!
We each had two peppers – and we each ate one. The other two went into the freezer for dinner next week.
Victor asked me if I could make a quick bread to go with them, and I went for a James Beard single rise loaf. Start to out of the oven in 90 minutes!
James Beard Single Rise Loaf
- 2 package of active dry yeast
- 1 tbsp sugar
- 2 tsp salt
- 1/4 cup olive oil
- 1 1/2 cups warm water (100-115 degrees)
- 3 to 3 1/2 cups all purpose flour
- 1 egg white beaten with 1T water
- course salt, sesame seeds, poppy seeds
In a large mixing bowl combine yeast and sugar. Let proof about 5 minutes. Add oil and 1/4 cup water. Mix.
Add salt. Add 1/2 cup of flour and continue mixing. Slowly add remaining flour.
Knead for several minutes until the dough springs back and is satiny and smooth. It is a fairly wet dough.
Form into a loaf about 20 to 22 inches long, let loaf rest about 20 minutes.
Brush lightly with egg wash and sprinkle with salt or seeds.
Bake in a preheated 300°F oven about 55 minutes.
