Soup is definitely one of our favorite food groups! It can be made with anything, it can be simple or complex, it can be thin or thick, and it can put to great use those little odds and ends that can collect in the ‘fridge.

Last night was simple and thick.

We had picked up a butternut squash and a couple of sweet potatoes at the grocers before new years and Victor decided they needed to become a soup. Naturally, I readily approved, because if Victor wants to cook, I readily step out of the kitchen.

It was pretty much a wing-it recipe – put things in a pot and make them hot.

The things were:

  • butternut squash
  • sweet potatoes
  • onion
  • garlic
  • chicken broth
  • cannellini beans
  • salt
  • pepper
  • aleppo pepper
  • cayenne pepper
  • hot honey
  •  butter
  • olive oil to finish

He cooked the majority of the cubed squash and potatoes in the broth after sauteing off the onion and garlic. Hit it with the immersion blender, then added the cannellini beans and the rest of the squash and potatoes and simmered just until done. Stirred in 2 pats of butter for a bit of richness and then drizzled the olive oil once in the bowl.

Simple and totally delicious. It will now be my lunch for the next couple of days.
