I took some chicken breasts out of the freezer on Wednesday, and then we went out to dinner with Phoebe and Nancy. We hadn’t seen them in a while and needed to catch up on life and gossip and stuff. Thursday, I had an eye exam in the afternoon, and we ended up having a nice, spicy soup I had made on Tuesday.

Friday, chicken was thawed in the ‘fridge – Victor said he’d cook! It’s something I never argue about. Ever.

He opened the ‘fridge and pulled out:

  • prosciutto
  • ricotta
  • parmigiano reggiano
  • quattro formaggio
  • spinach
  • an egg

In a few minutes, he had stuffed chicken breasts and potatoes going into the oven.

The boy’s a culinary genius!

Tender, juicy, tons of flavor… it was a perfect meal.

He even did the dishes.
