Sweet caramelized onions atop a perfectly-cooked steak is one of life’s little pleasures. Add mashed white sweet potatoes and it’s pure bliss.
The sweet potatoes were boiled and then riced – I love that ricer – and then a handful of shredded cheese was added, along with a bit of the cooking water and salt & pepper.
The steaks were seasoned with a BBQ rub I made a few months ago:
Rib Rub
- 1/3 cup kosher salt
- 1/2 cup brown sugar
- 1/4 cup Penzeys Ozark seasoning
- 1/4 cup smoked paprika
- 2 tsp cayenne pepper
- 2 tsp mustard powder
- 2 tsp black pepper
Mix and store in an airtight container.
I seared them on a cast iron skillet and then put them into a hot oven for about 20 minutes.
The onions were sliced and then slowly fried in a bit of olive oil and a bit of butter, salt & pepper. I kept a lid on them almost the entire time I cooked them, taking it off to stir fairly often.
They came out stellar.
