Scandinavian Apple Cake

Makes a 9″ round cake

 

  • 3-4 medium-size apples
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • 2 cups flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 1/2 sticks butter, softened
  • 1 cup sugar
  • 3 eggs
  • 1 tsp vanilla
  • 1/2 cup sour cream
  • 1/4 cup apple jelly, melted
  • 2 tbsp sliced toasted almonds

Peel apples and slice into 8 wedges. Toss with 2 tbsp sugar and 1 tsp cinnamon.

Grease a 9″ springform pan. Whisk flour, salt, and baking powder together..

Beat butter and sugar in mixer until light and fluffy – about 4 minutes. Add eggs and vanilla and continue whipping until light – another 3 or so minutes.

Stir in half of the flour mixture.

Stir in siur cream.

Stir in remaining flour, mixing well until batter is smooth.

Pour into prepared pan.

Arrange apple slices on top of cake, pushing pieces partly into batter.

Bake at 350°F for 1 hour and 15 minutes, or until a tester comes out clean.

Cool on rack for 10 minutes, then remove sides.

Brush top with apple jelly and sprinkle with nuts.
