Miss Finney’s Apple Cake
  • 3 cups sifted all-purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 2 cups sugar
  • 1/2 tsp salt
  • 3 eggs
  • 1 1/4 cups neutral oil
  • 1 tsp vanilla
  • 1/4 cup orange juice
  • 2 cups grated apple
  • 1 cup chopped walnuts
  • 1 cup flaked coconut

Sift flour, baking soda, salt, and cinnamon.

Combine sugar, eggs, oil, vanilla, and orange juice in mixer. Beat until well-blended.

Stir in flour mixture until well blended.

Fold in apples, walnuts, and coconut.

Spoon into a well-greased tube pan.

Bake at 325°F for 1 1/2 hours or until top springs back when lightly pressed.

Cool in pan 15 minutes before removing.

Top with icing or with a buttermilk sauce, if desired.

Buttermilk Sauce

  • 1 cup sugar
  • 1/2 cup butter
  • 1/2 tsp baking soda
  • 1/2 cup buttermilk

Combine all ingredients in saucepan. Cook, stirring, until it reaches a boil.

Remove cake from pan and set on serving plate. Poke cake all over with a skewer. Spoon hot buttermilk sauce all over cake until it is all absorbed.

Let stand about an hour before cutting.
