Warm water will rise the dough to the right point for storage in about 2 hours.<\/p>\n<p>2.\u00a0 <strong>Add yeast and salt to the water<\/strong> in a 5 quart bowl or a plastic container with a lid.<\/p>\n<p>3.\u00a0 Mix in the flour \u2013 kneading is unnecessary.\u00a0 Add all of the flour at once, measuring the flour by scooping it and leveling it off with a knife.\u00a0 Mix with a wooden spoon \u2013 do not knead.\u00a0 You\u2019re finished when everything is uniformly moist, without dry patches.\u00a0 This step is done in a matter of minutes.\u00a0 The dough should be wet and loose.<\/p>\n<p>4.\u00a0<strong> Allow to rise.<\/strong> Cover with a lid (not airtight).\u00a0 Lidded plastic buckets designed for dough storage can be purchased many places.\u00a0 (I used a plastic square food storage container at my local grocery store.\u00a0 I just make sure that the lid is not snapped on completely).\u00a0 You want the gases to be able to escape a little.\u00a0 Allow the mixture to rise at room temperature until it begins to collapse (or at least flattens on top), about two hours. Longer rising times will not hurt your dough.\u00a0 You can use a portion of the dough any time after this period. Fully refrigerated wet dough is less sticky and is easier to work with than dough at room temperature.\u00a0 So, the first time you try this method, it\u2019s best to refrigerate the dough overnight (or at least 3 hours) before shaping a loaf.<\/p>\n<p><strong>Baking<\/strong><\/p>\n<p>5. <strong>Shape your loaf. <\/strong> Place a piece of baking parchment paper on a pizza peel (don\u2019t have a pizza peel \u2013 use an unrimmed baking sheet or turn a rimmed baking sheet upside down).\u00a0\u00a0 Sprinkle the surface of your dough in the container with flour.\u00a0 Pull up and cut off about a 1-pound piece of dough (about the size of a grapefruit), using scissors or a serrated knife.\u00a0 Gently stretch the surface of the dough around to the bottom on all four sides, rotating the ball as you go.\u00a0 Dust your hands with flour if you need to.\u00a0 This is just to prevent sticking \u2013 you don\u2019t want to incorporate the flour into the dough.\u00a0 The top of the dough should be smooth \u2013 the object here is to create a \u201cgluten cloak\u201d or \u201csurface tension\u201d.\u00a0 It doesn\u2019t matter what the bottom looks like, but you need to have a smooth, tight top.\u00a0 This whole step should take about 30 seconds!\u00a0 Place the dough onto your parchment paper.<\/p>\n<p>6. <strong>Let the loaf rise <\/strong>for about 40 minutes (it does not need to be covered).\u00a0 If it doesn\u2019t look like it has risen much, don\u2019t worry \u2013 it will in the oven.\u00a0 This is called \u201coven spring\u201d.<\/p>\n<p>7.\u00a0<strong> Preheat a baking stone<\/strong> on the middle rack in the oven for at least 20 minutes at 450 degrees F.\u00a0 Place an empty rimmed baking pan or broiler pan on a rack below the baking stone.\u00a0 This pan is for holding water for steam in the baking step.\u00a0 (If you don\u2019t have a baking stone, you can use a baking sheet, but you will not get the crisp crust on the bottom.\u00a0 You will still have a great loaf of bread.\u00a0 Baking stones are cheap and easy to find \u2013 Target carries them \u2013 and are a must for making pizzas, so go out and get one as soon as you can.)<\/p>\n<p>8. <strong>Dust the loaf <\/strong>with a little flour and slash the top with a knife.\u00a0 This slashing is necessary to release some of the trapped gas, which can deform your bread.\u00a0 It also makes the top of your bread look pretty \u2013 you can slash the bread in a tic tac toe pattern, a cross, or just parallel slashes.\u00a0 You need a very sharp knife or a razor blade \u2013 you don\u2019t want the blade to drag across the dough and pull it.\u00a0 As the bread bakes, this area opens and is known as \u201cthe bloom\u201d.\u00a0 Remember to score the loaves right before baking.<\/p>\n<p>9.<strong> Bake.<\/strong> Set a cup of water next to your oven.\u00a0 Slide the bread (including the parchment paper) right onto the hot baking stone.\u00a0 Quickly pour the water right into the pan underneath the baking stone and close the oven door.\u00a0 This creates the necessary steam\u00a0 to make a nice crisp crust on the bread.\u00a0 Bake at 450 F for about 25 \u2013 30 minutes.\u00a0 When you remove the loaf from the oven, you will hear it crackle for a while.\u00a0 In baking terms, this is called \u201csing\u201d and it is exactly what you want.<\/p>\n<p>10.\u00a0<strong> Cool.<\/strong> Allow the bread to cool for the best flavor and texture.\u00a0 It\u2019s tempting to eat it when it\u2019s warm, and that\u2019s fine, but the texture is better after the bread has cooled.<\/p>\n<p>11.\u00a0<strong> Store<\/strong> the remaining dough in the refrigerator in your lidded (not airtight) container and use for up to 14 days. Every day your bread will improve in flavor.\u00a0 Cut off and shape more loaves as you need them.\u00a0 When your dough is gone, don\u2019t clean the container.\u00a0 Go ahead and mix another batch \u2013 the remaining bits of dough will contribute flavor to the next batch, much like a sourdough starter does![\/vc_column_text][\/vc_column][vc_column
