Gently fold the egg whites into the batter until evenly blended. Divide the cake batter evenly among the two or three prepared cake pans.<\/p>\n<p>Bake for about 30-35 minutes for 8\u2033 cakes or 40-45 minutes for 10\u2033 cakes \u2013 or until toothpick comes out clean.<\/p>\n<p>Cool in pans about 15 minutes, remove from pans and set on racks until completely cool.<\/p>\n<p><strong>For Whipped Cream Icing:<\/strong><\/p>\n<p>Whip 1 1\/2 cups whipping cream with 1\/4 cup Coco Lopez.\u00a0 Place about 1\/3 whipped cream on first layer.\u00a0 Top with second layer and spread remaining 2\/3 cream on top.\u00a0 Generously top with shredded
