The fillings can be as varied and exotic \u2013 or simple and plain \u2013 as you wish. They can also be sweet or savory, depending upon your mood or time of day for eating them.<\/p>\n<p>&nbsp;<\/p>\n<p>adapted from\u00a0<a href=\"http:\/\/www.finecooking.com\/recipe\/feta-herb-filled-pogaca-rolls\" target=\"_blank\" rel=\"noopener\"><em>Fine Cooking<\/em>\u00a0<\/a>magazine<\/p>\n<p><strong>Dough:<\/strong><\/p>\n<ul>\n<li>1 cup whole milk, warmed to 105\u00b0F<\/li>\n<li>1 tbsp active dry yeast<\/li>\n<li>2 tsp sugar<\/li>\n<li>1 large egg<\/li>\n<li>\u00bd cup neutral oil<\/li>\n<li>3 cups all-purpose flour<\/li>\n<li>1 tsp kosher salt<\/li>\n<\/ul>\n<p><strong>Filling:<\/strong><\/p>\n<ul>\n<li>4 oz chevre<\/li>\n<li>4 oz queso fresco<\/li>\n<li>1 tbsp chives<\/li>\n<li>1 tbsp parsley<\/li>\n<\/ul>\n<p>Combine warm milk with yeast and sugar in a mixer bowl. Proof about 5 minutes.<\/p>\n<p>Add egg and oil and mix.<\/p>\n<p>Add flour and mix on medium low speed about 10 minutes or until silky smooth.<\/p>\n<p>Turn dough out onto a lightly-floured board and shape into a ball. You really do need to be firm with this step \u2013 some of the rolls really did come apart. It\u2019s not changing the flavor, but esthetically, they could be more flower-like.<\/p>\n<p>The recipe called for 2 teaspoons of salt. I made it that way but think they would be better with just one.<\/p>\n<p>But they are light, really flavorful, and with just enough cheese filling to flavor but not
