Stilton and Arugula Soup

  • 2 cups Vegetable Broth
  • 1 bag Arugula
  • 4-5 oz Stilton
  • 2/3 cup Half and Half
  • 1 tsp Hot sauce (or to taste)

Heat broth. Add arugula and simmer 2-3 minutes.
Crumble cheese into soup and wisk to blend. Cream soup using blender or immersion blender. Add hot sauce and half and half.
Check for seasoning and add salt and/or pepper, if desired.

Serve with crackers or something crunchy!
