Quinoa Salad 3

Here’s yet another variation on a theme! A quick and easy salad that is sure to delight everyone!

  • 1 cup quinoa, cooked according to package instructions
  • 1 can marinated bean salad
  • 1 jar grilled vegetable bruschetta
  • crumbled goat cheese
  • organic baby spinach (or greens of your choice)

Prepare quinoa according to pkg instructions and cool.

Add undrained marinated bean salad and undrained grilled vegetable bruschetta. Add crumbled goat cheese to taste. check for seasoning and add salt and pepper, if desired.

Serve over organic baby spinach or other greens of your choice.
