Easy Rice Pudding

This is a quick and easy Rice Pudding – perfect for those cold winter nights!

  • 1 bag frozen rice
  • 2 cups milk, divided
  • 1/3 cup sugar
  • 2/3 cup raisins or other dried fruit
  • Pinch salt
  • 1 tablespoon butter
  • 1 egg, beaten
  • 1/2 teaspoon vanilla
  • Dash nutmeg or cinnamon

Combine rice and 1 1/2 cups milk, sugar and salt in saucepan. Cook over medium heat, stirring occasionally until thick and creamy, about 15 minutes. Blend remaining half cup milk and egg. Stir into rice mixture. Add raisins. Cook 2-3 minutes longer, stirring occasionally. Add butter and vanilla. Sprinkle with nutmeg or cinnamon. Serve warm or cold
