Jan Hammer Dineen

  • 1/2 onion, minced
  • 2 stalks celery, minced
  • 2 oz. pine nuts
  • 1 tbsp butter
  • 2-1/2 C chicken broth
  • 1 C long grain white rice

Melt butter. Lightly brown celery and pine nuts in butter. Add chicken broth and bring to boiL Add rice. Cover and simmer on low heat for 30 minutes. Serves 8-10.
