Jan Hammer Dineen

These pancakes are a fond memory from my childhood! This is my Dad’s recipe.

  • 2 C flour
  • 2 C buttermilk

Mix well and let stand overnight.

Add:

  • 1 egg yolk
  • 1 tbsp butter, melted
  • 1/2 tsp sugar
  • 1 tsp salt
  • 1 tsp soda dissolved in 1 tbsp water
  • 1 egg white, beaten stiff and folded in last

Cook batter quickly over a hot fire.
