  • 2/3 cup red wine vinegar
  • ½ tsp. dried oregano
  • 1 tsp. dried basil
  • 3 Tbsp. Dijon mustard
  • 1 tsp. salt
  • ½ tsp. black pepper
  • 2 tsp. minced fresh garlic
  • ½ cup olive oil

Soak the oregano and basil in vinegar for 5 minutes. Add mustard, salt, pepper and garlic to the herbed vinegar. Whisk the oil in a thin steady stream to emulsify. Whisk again before dressing salad.
